Mango Coconut Smoothie Drink

I love the tropical taste of mango and coconut together. Mango juice and frozen fruit are pureed with cream of coconut, yogurt, and lime juice for a perfectly delicious combination of flavors. With a bit a nutmeg and cardamom, this creamy drink is like a combination of an Indian mango lassi and a tropical pina colada, making it a cool and refreshing treat any time of day.

The Canopy City of Weiba

Many have partaken in the fermented fruit drinks enjoyed by the inhabitants of Teyen’s rainforests. Only in the canopied city of Weiba, however, can one enjoy the drink in its unfermented state. Most of the crop of mango puree is stored to ferment with a squeeze of lime juice, awaiting a sweetening of honey after a month or two. But a portion of the juice is set aside to be drunk immediately. Mixed with a bit of milk curd from the yaks that drink at the river and the milk of the coconuts that grow among the trees, this unfermented mixture is spiced up with local ground cardamom and nutmeg. It’s the perfect way to end the day, watching the sunset from the boughs of Yellow Elder trees.

Located in the north east of Sobukand, Teyen is a region mostly made up of tropical rainforest. The Seven Dragons River stretches across its length, and is incredibly important to the culture and history of Teyen.

The city of Weiba lies to the south, and is known for the great Yellow Elders that dominate the wetlands along the river. Bees are kept in the village treehouses high up in the canopies, and honey is abundant, used in cooking and in strong drinks of fermented fruits. Before those fruit drinks become alcoholic however, the mango and lime versions are mixed into a delicious slurry of juice and stored in large clay jugs. While most are set aside to ferment, a few crocks are mixed with coconut milk for an immediately refreshing – and not nearly as intoxicating – version of the drink. Half dessert and half smoothie, this luscious mango coconut drink is the perfect addition to a Teyen celebration.

Mango Coconut Smoothie

Ingredients
  

  • 2 cups mango chunks, frozen
  • 1 cup low-fat yogurt
  • ½ cup cream of coconut
  • ½ cup mango juice
  • 1 tablespoon lime juice
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground nutmeg

Instructions
 

  • Puree the mango chunks, yogurt, cream of coconut, mango juice, lime juice, and cardamom together in a blender until smooth. Divide into half-cup servings and sprinkle each with a bit of nutmeg. Serve chilled.
